How to Make Banana Cream Pie

This is the place to find out how to cook a delicious banana cream pie. This recipe makes 8 servings.

Things You'll Need

  • Pie plate
  • Fork
  • Medium-sized saucepan

Ingredients


Crust

  • 1/3 cup shortening or lard
  • 1 cup all purpose flour
  • 1/4 teaspoon salt
  • 3-4 tablespoons cold water

Filling

  • 2/3 cup sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 3 cups milk
  • 4 large egg yolks, slightly beaten
  • 2 tablespoons (1/4 stick) butter, softened
  • 1 teaspoon vanilla extract
  • 2 large bananas, sliced

    Method 1 of 2: Crust

      Preheat oven to 475ºF.

      Combine the flour and salt, then cut the shortening/lard in until the pieces are the size of coarse crumbs.

      Add cold water, 1 tablespoon at a time, while tossing, until the dough stops clinging to the side of the bowl. Add 1 or 2 more teaspoons of water if necessary.

      Roll the dough out on a lightly floured surface into a flattened round. Roll into a circle that is about 2 inches larger than the upside-down pie plate (9 x 1 1/4 inches).

      Ease the dough into the pie plate.

      Trim the edge of the dough 1 inch past the rim of the pie plate. Fold the dough under, and flute.

      Prick the bottom and sides of the dough with a fork.

      Bake for 8-10 minutes.

      Mix the sugar, cornstarch, and salt in a medium (2 quart) saucepan. Gradually whisk in the milk.

      Cook over medium heat until the mixture thickens and boils, which will be about 6 minutes. Then, boil and stir for 1 minute.

      Stir about half of this mixture with the egg yolks, then stir it back into the rest of the mixture in the saucepan. Boil and stir for 1 minute, then remove from heat.

      Stir in the butter and vanilla.

      Put the sliced bananas at the bottom of the pie shell, then pour the mixture in.

      Refrigerate until set, or about 2 hours.

      Serve topped with whipped cream, and a few banana slices, if desired.

      Tips

      • You can also use a graham cracker crust instead of a baked pie crust; or, you can just buy a ready-made crust from the store.
      • Mix the whipping cream well, or people will get a mouthful of sugar.
